Mexican at Home

Muy Bien! Tonight for dinner I went Mexican.

I stuffed toasted soft shell tortillas with sauteed black beans, green peppers, onions, jalapeño, left over salmon (an interesting addition to the mix), and spinach. I sprinkled some paprika and garlic over the mix for some extra flavor.

I served these with a side of spinach and some of my dads world famous SALSA!
